Tom Cat Bakery, a well-established name in New York’s dining scene, has introduced a new line of artisanal Japanese Milk Bread products. This latest offering is available to both retail and foodservice customers. The bakery collaborated with Japan’s Yamazaki Baking to create these products, combining Japanese baking traditions with Tom Cat’s American artisan standards.
The new product line includes a Shokupan sandwich loaf, a seeded pullapart roll, and a burger bun. The Shokupan loaf is produced using the yudane method, where flour and water are pre-cooked before being added to the dough. This technique gives the bread a distinctive springy and fluffy texture. The bread is made with all-natural ingredients, including heavy cream and honey, which contribute to its rich flavor.
Tom Cat Bakery’s Japanese Milk Bread products are now available to foodservice customers through Dot Foods and to grocery retailers in Tom Cat-branded retail packaging.
