By monitoring texture, moisture and visual cues in real time, it delivers dishes in just four to five minutes—no more guessing on timing or stirring risotto for minutes on end.
Unveiled at the National Restaurant Association Show in Chicago, Al Dente offers a turnkey solution for fast casual restaurants, pasta bars, cafeterias and ghost kitchens. Its robust chassis handles high-volume output while keeping quality consistent, and ingredient-loading automation is on the horizon to further streamline service. From spaghetti pomodoro to risotto al funghi, Al Dente can replicate complex recipes with Michelin-level precision, all without sacrificing the time-honored techniques chefs value.
Next Robot co-founder Giggs Huang emphasizes that automation should preserve culinary heritage, not erase it. “Al Dente doesn’t just cook pasta and risotto, it safeguards centuries-old traditions while preparing kitchens for tomorrow’s challenges,” he explains. Meanwhile, ChefSight’s real-time feedback loops ensure every batch meets exacting standards, turning human oversight into a supportive role rather than a manual grind.
With Robby already in over 100 locations and able to crank out 900 servings of stir fry per hour, Al Dente broadens the company’s vision of scalable, intelligent cooking. Next Robot’s lease-based service includes software updates, preventive maintenance and rapid response support, ensuring operators can focus on creativity and customer experience rather than labor shortages or training costs. Al Dente’s production model will arrive later this year, promising a new era of hands-off, high-quality meal production.
