The collection is made from a fusion of iron, carbon and nitrogen, resulting in naturally evolving nonstick surfaces that improve with each use. Unlike traditional carbon steel, the pans arrive ready to cook and require no initial seasoning or complex cleaning routines.
Each piece features a nitrided surface with a mirror polish for smooth food release. Over time, the pans develop a darkened patina that enhances flavor when searing at high heat. Lighter than cast iron, the cookware heats quickly, browns evenly and withstands temperatures up to 1000°F on all stovetops—including induction—as well as in ovens, pizza ovens and on grills. Cast stainless-steel handles remain cool during stovetop cooking.
