Katie’s has entered every Target store nationwide with handmade frozen pizzas, a milestone the company says it achieved by rejecting automation and keeping a chef driven process. Led by CEO and founder Katie Lee, the brand frames the breakthrough as proof that hand stretched, wood fired, premium pizzas can compete in a processed category.
Lee’s story underpins the push. Once a high school dropout who faced homelessness and addiction, she is now a single mother, restaurateur, and wellness enthusiast. “When I was homeless, everything I owned would have fit into one of their shopping bags, now I’ve made it to Target’s shelves with Katie’s pizzas. I’ve come a long way, and our team is always pushing, no matter the odds,” said Lee. “As a busy working mom, it’s hard to find convenient, real food, so we made it ourselves. This is real food for the soul handcrafted with the best ingredients. There’s nothing else like it and we’re proud to stand behind that.”
The brand reports more than 100% year over year growth since 2021. Each pizza starts with 48 hour naturally leavened dough, hand stretched and wood fired at 800° F, with house made sauces and premium ingredients shown through clear packaging. Four varieties are available now at Target: Burrata Margherita, Pepperoni Stracciatella, Meatball, and Black Garlic Burrata Cheese.
