Four Seasons Resort Maui at Wailea has introduced a new dining venue named KOMO, which specializes in Japanese cuisine. This establishment features an intimate setting with 50 seats, including a 14-seat sushi bar, integrated into the resort’s lobby. The design aims to provide a sophisticated atmosphere where culinary experiences can be shared among guests.
KOMO is led by Chef Kiyokuni “Kiyo” Ikeda, who brings over 25 years of culinary experience from Japan. The restaurant’s menu focuses on sushi, emphasizing traditional techniques alongside modern interpretations. Ingredients are carefully sourced, with particular attention to the quality of fish and the preparation of sauces and condiments, such as custom soy sauce and freshly grated wasabi.
A notable feature of the dining experience is the Mystery Box, which introduces a selection of seafood from Japan’s Kanagawa Prefecture. This initiative allows for a unique dining experience, as the contents of the box are unknown until they arrive, fostering creativity in the menu offerings.
The beverage program complements the food with a selection of sake and Japanese beers, specifically curated to enhance the dining experience. Notable offerings include exclusive sake made from premium rice and specialty cocktails inspired by Japanese flavors.
Desserts are crafted by Executive Pastry Chef Ashish Thalakkat, featuring a variety of Japanese-inspired sweets and playful takes on traditional street foods. Guests receive a daruma doll as a memento of their visit.
The restaurant’s design, created by Atelier Pond, reflects Maui’s natural beauty, incorporating elements that echo the island’s volcanic landscape. The use of materials such as lava stone and quartzite, along with an open-air concept, creates a harmonious environment. The lighting design by L’Observatoire International enhances the ambiance, utilizing mirrors to reflect the natural light and colors of Maui’s sunsets.
KOMO joins the resort’s existing dining options, which include Ferraro’s Restaurant & Bar and Wolfgang Puck’s Spago Maui, contributing to the resort’s reputation for high-quality dining experiences. General Manager Ben Shank noted that KOMO represents a commitment to providing exceptional culinary offerings that blend Japanese cuisine with Hawaiian hospitality.
